Looking for the perfect holiday treat? These spiced ginger cookies are a festive favorite of our Export manager Gracia - warm, chewy, and full of flavor! With a hint of cinnamon and a sweet touch of candied ginger, they’re guaranteed to bring Christmas cheer to your table.

Ingredients

The recipe makes about 20 cookies.

250 g (2 cups) all-purpose flour
100 g (½ cup) softened unsalted butter, or vegan butter
100 g (½ cup) dark brown sugar
1 egg
2 tbsp honey or molasses
2 tbsp ginger syrup
1 tsp baking powder
3 tsp ground ginger
½ tsp cinnamon (optional)
Pinch of salt
Candied ginger pieces (for topping)

Instructions

  1. Preheat oven to 180 °C / 350 °F.
  2. Cream butter and sugar until light and fluffy. Add the egg, honey, and ginger syrup; mix well.
  3. Sift in flour, baking powder, ground ginger, cinnamon, and salt. Mix until a firm dough forms.
  4. Roll the dough into small balls (about 1 inch), then flatten slightly.
  5. Press a few pieces of candied ginger onto each cookie.
  6. Bake for 10–12 minutes until golden brown. Cool on a wire rack (they firm up as they cool).
  7. Tip: For extra chewiness, you can chill the dough for 30 minutes before baking.
